Take-out Tuesday, A-B-C-Tart, Asparagus, Bacon and Corn

There is nothing easier for a quick meal than a throw together tart. Use what’s in your fridge, add some eggs and cheese, and you’ll have a well balanced and mouth watering meal that is so much better than take-out
Refrigerated pie crust is a great staple
Even though it comes in a round shape, it’s easy enough to coax into a square with a little gentle stretching a rolling
The sides only come up 1/2 inch or so because I am making a tart rather than a deep dish pie or quiche. If the filling goes over the crust edge it won’t matter, it will bake just fine
Sprinkle the dough with sesame seeds for added flavor and texture
Fresh corn, asparagus, cooked bacon and cheese~ABC easy
Microwave corn in the husk, 4 minutes per ear, then cut husk at wide base of ear. Hold corn vertically by the other end of the husk and squeeze cob out
I like to cut corn off the cob by using a kitchen towel. It catches and contains the runaway kernels
Rinse asparagus and wrap in a kitchen towel and microwave for 2 minutes. Remove and cut into 1 inch pieces
Put corn and asparagus into tart
Top with bacon and cheese
Pour beaten eggs and milk over ingredients in the dish
Bake at 350 for 45-60 minutes until set, puffed and golden
Cut into squares to serve

ABC TART, ASPARAGUS, BACON AND CORN
Ingredients
- 1 refrigerated pie crust dough
- 2 ears corn
- 30 asparagus spears
- 6 pieces bacon cooked
- 3 oz Manchego cheese chopped or grated
- 2 oz grated Parmesan
- 4 large eggs
- 1 cup milk or half and half cream
- salt pepper
- 3 T sesame seeds optional
Instructions
- Microwave corn in husks or wrapped in a towel for 4 minutes per ear. If corn is still in the husk, cut off bottom of corn at wide base and hold the other end of corn up vertically and gently shake to ease cooked ear out of the husk
- Place crust in shallow casserole or tart pan. Sprinkle with sesame seeds.
- Rinse asparagus and wrap in towel. Microwave for 2 minutes on high. Remove and cut into 1 inch pieces. Place corn and asparagus on crust and top with bacon and cheeses.
- Beat eggs and add milk. Season well with salt and pepper. Pour over ingredients in the pan. Bake at 350 for 45-60 minutes until set and golden. Serves 6.
Serve it with fruit for brunch, with salad for lunch, and with soup for dinner~or all by itself it makes a lovely meal anytime! It reheats and freezes beautifully too
