Recipe Box, Favorite Autumn Salads

With September on the horizon, we are all thinking about the wonderful foods and flavors of fall
It will be hot in the South for another 6-8 weeks, so those pots of chili won’t be on my stove, but these salads will satisfy fall food cravings and still keep you cool~
Pumpkin Patch Salad combines crisp apple slices with cranberries, walnuts and pepitas and is dressed with a Pumpkin Vinaigrette and served with Ham and Cheese pumpkin shaped hand pies
Roasted Sweet Potato Spinach Salad with Maple Bacon is one of my favorite ways to keep things light with comfort food satisfaction
Autumn Salad with Warm Corn & Bacon Vinaigrette is actually simple to assemble, the dressing comes together in the skillet after sauteing the bacon
Spiralized Pear Salad is jazzed up with the spiralized pears, and spiralized apples would be great too
Maple Bacon Wrapped Pear Salad is a feast for the eyes, you could sub prosciutto too
Grilled Romaine Salad with Pears, Brussels & Bleu
Try amping up your menu with Power Greens Salad with Butternut Squash Ravioli Croutons, it is guaranteed to put a spring in your step!
Roasted Grape Salad features oven roasted grapes paired with flavorful asiago cheese and pine nuts for a taste of the Italian country side
Use up the last of your summer squash and basil with a Smokey Chipotle Pasta Salad
What do you look forward to in fall?
For me it’s pumpkins!
