Hello February!!
So many fun holidays and events this month
Today is Groundhog’s Day AND Super Bowl Sunday,
Then on the horizon is the Academy Awards, Valentine’s Day,
President’s Day, Fat Tuesday and Mardi Gras!
This month’s paint bucket has plenty of party food for all the celebrations
The flavor/theme of the month is Mardi Gras 🎭

The flavor of the month was Winter Vegetable
adapted from Endive Boats with Bacon, Walnuts, Cranberries & Gorgonzola from The Sea Salt
These were a huge success at our New Year’s Day gathering
I was inspired by Buttery Garlic Mushrooms {lo carb & Keto} from source and Roasted Cauliflower Salad from Women’s Day to make
Roasted Cauliflower Steaks with Killer Mushroom Cream
Instant Pot White Chicken Chili from Sweet and Savory Meals was my first recipe made in my new Instant Pot. It was a huge success both in preparation and taste! I added extra corn plus a can of creamed corn for even more goodness
You can make this in a slow cooker too or stove top, directions included in the post
Broccoli & Cheese Stuffed Spaghetti Squash from Domestic Superhero was the inspiration for
Broccoli Stuffed Spaghetti Squash with Roasted Garlic, Fresh Mozzarella & Parmesan
Peanut Butter Mousse Minis were adapted
from Skinny Frozen Peanut Butter Whips from the Creative Bite

Jenna, oh how I love those peanut butter treats! I think of you every time I make them. I’m making white chicken chili this week in the instant pot. It is becoming my new favorite kitchen item. Have a wonderful week, sweet friend!

Oh my but they all look so tasty as did your all of your wonderful snacks / appetizers for tonight’s big game suggested the other day. I am amazed at your endless recipes for daily use and special ones for parties and events. It makes my head spin, lol. I am still on track at working on weekly menus, but it is work for me, ha! I wish I was as creative as you are. Keep those good recipes coming and thank you.
