Take-out Tuesday, Duke’s Parmesan Chicken Salad with Strawberries & Balsamic

This elegant summer salad is simple-easy to throw together

on a busy weeknight

Strawberries paired with fresh greens and a luscious baked chicken,

your tastebuds are in for a treat!

The chicken is coated with Duke’s Mayo and Parmesan

You can prep the tenders right in the pan,

spread, sprinkle, turn over, repeat

Pop them in the oven for 30-45 minutes

{time depends on the size of the chicken}

and go have a glass of wine and relax

If you use pre-washed greens, the salad is a snap to prepare

As the chicken bakes, the mayonnaise breaks down,

basting the tenders

Use a spoon to scoop up the pan juices

and baste tops of chicken about half way through baking time

and add a few more sprinkles of cheese

Place salad greens on plate or in a pasta bowl

Add chopped pecans, sliced strawberries,

and add optional crisp bacon pieces

and crumbled bleu cheese if desired

Top salad with 2-3 chicken tenders

Drizzle salad with Strawberry Balsamic Vinaigrette

I used Stonewall Kitchen’s Strawberry Balsamic Vinaigrette or you can make dressing from these recipes:

Duke’s Parmesan Chicken Strawberry Balsamic Salad

Ingredients
  

Salad

  • Ingredients per person
  • 4 cups mixed salad greens of choice romaine, arugula, spinach, kale, etc.
  • 2-3 large strawberries trimmed and sliced
  • 1/4 cup chopped pecans
  • 1-2 slices bacon optional
  • 1 oz. crumbled bleu cheese optional
  • 2-3 Duke’s Parmesan Chicken Tenders
  • Strawberry Balsamic Dressing {I used Stonewall Kitchen}

Duke's Parmesan Chicken Tenders

  • chicken tenders
  • 2 Tablespoons Duke’s Mayonnaise per tender
  • 1/2 oz. shredded Parmesan cheese per tender
  • Garlic salt to taste

Instructions
 

  • Place tenders in a greased baking dish.  Spread top side with mayo, sprinkle with cheese and garlic salt.  Turn over and repeat.  Bake at 375 for 30-45 minutes until golden and cooked through.

    • Thank you Pam, I love salad for dinner! Glad you got some rain, we got a good soaking yesterday afternoon, and I just got a heat advisory on my phone for heat index feeling like 105 today 😅, I need to get back to the coast, it’s too hot up here for me!

  10. I’ve never used mayo in baking Jenna, this sounds like a good recipe to try:@) Every once in a while the dollar stores here carry Duke’s mayo too.

  12. You have just saved me some head scratching! I have a couple of chicken breasts out for dinner, but I wasn’t sure how I wanted to prepare them in this 100 degree heat. I can do this. It will be good to have something relatively light and easy!

  13. Yummy. I haven’t heard of Duke’s mayo. I recently came across a recipe using mayo on pounded chicken breasts. Paul love it. The chicken was so tender and moist. Anything balsamic I love.

    • hi Cyndi, yes the chicken is similar to Picnic Chicken. Hellman’s is a great mayonnaise too, very similar to Duke’s, so you can definitely use that. I hope you enjoy, I love this salad 🙂
