Throwback Thursday, Spring & Summer Desserts

Now that Spring has “sprung”

our thoughts are turning to lighter recipes…

I start craving lemon, key lime and berries

I’ve rounded up some favorites to re-share today

I love to make jar desserts, so easy to serve and eat~

plus, they are so portable, perfect for picnics and outdoor BBQs

Lazy Lemon Pies are just cookies, lemon curd and whipped cream~

I told you they were lazy!

I like to make mini desserts in the summertime,

a little less guilt that way!

Key Lime Pie Minis are like eating a bite or two of Key Lime Pie

Strawberry Cheesecake Cookie Cups are wonderful too

These little bites are bursting with fresh strawberry flavor!

If you’d rather have a whole pie,

this 5 Minute Key Lime Ice Cream Pie is so refreshing

And yes, it only takes 5 minutes to make!

Inside Out Berry Pie is a good choice too

Instead of a cookie crust,

Oreo cookies are mixed right into the filling

Speaking of Oreos,

this Peanut Butter Oreo Pie is creamy, dreamy delicious!

Let’s not forget about cake!

Lemon Blueberry Bundt Cake has triple the lemon flavor

from lemon cake mix, lemon pudding and a lemon glaze

It is bursting with blueberries

and can be served for breakfast or dessert

Fisher Boy Cupcakes are fun to serve in the warm months

The guys in my family are all about fishing

The fishing poles

are short wood skewers, dental floss and gummy fish candy

If warmer temps have you dreaming of the beach

and putting your toes in the sand,

bring the beach to you with a Bahama Beach Bundt Cake

It’s topped with brown sugar “sand” and white chocolate seashells

Summer means watermelon and it’s not only delicious,

but you can turn cupcakes and ice cream

into watermelon treats~

like Watermelon Mini Chocolate Chip cupcakes

and Watermelon Ice Cream Pie
