Recipe Box, BBQ Chicken & Corn Pizza with Spinach Salad Topping

Last weekend there was a concert on the water near our house
A big tug boat arrived pushing a palm tree lined barge, called “Gumbo Key,” that served as the stage for the bands
The only way to get there was by boat or by float
Party goers arrived on everything from yachts to cooler laden paddle boards, kayaks and jet skis
It wasn’t only crazy
It was mayhem 😉
It was fun to cruise around and see what everyone was up to
We saw some interesting sights…watch out for sharks!
You can see more photos of Gumbo Key here
We worked up quite an appetite, and went home to an easy peasy BBQ chicken pizza made with some leftover Island Time Chicken Wings
Island Time Chicken is a 5 Minute Prep, and a Slow Cooker recipe, which is perfect for busy summer days. You can make it with breast or thighs too, whatever you like
We loaded the slow cooker up with chicken wings Saturday and had enough left over for a tasty pizza on Sunday
This pizza features both white and red BBQ sauce
If you’ve never had Alabama White BBQ sauce, you must remedy that immediately!
It’s wonderful on grilled chicken or on fish instead of tartar sauce
You can also substitute plain mayonnaise or creamy Italian, ranch or bleu cheese dressing
A thin base layer not only adds an extra tang but helps secure the toppings
Top the white sauce with chopped chicken, drizzle with red BBQ sauce and sprinkle it with bleu cheese crumbles
If you don’t like bleu cheese, skip cheese or substitute goat cheese or a white melting cheese like Mozzarella, Fontina, Manchego or Monterey Jack
Sprinkle with corn kernels and top with torn fresh spinach
Before serving give the spinach a whisper of olive oil and finish with a light sprinkle of kosher or finishing salt
This is kind of like having your BBQ supper on a pizza!

BBQ Chicken & Corn Pizza with Spinach Topping

Yum and what a fun day/life! 😉
Friday night I had a pizza very much like this and it was yummy. I couldn’t eat it all so it’s today’s lunch for hubby and me.
Wow! What fun! And I love the chicken wings in the crock pot! Easy, peasy!
This looks like so much fun and the food looks amazing. Lovely! Thank you for linking up at Dishing it & Digging it link party. We just love having you. Have a great week.
No Dukes? (faint) : )
Gumbo Key would be fun if I had your easy access location, but I’ve often wondered about the major hassle of the crowd if you have to launch a boat from afar. Looks like you hit a home run with your paradise location and the after-event pizza! Yum!
The Hellman’s was an unfortunate discretion, please forgive!

What a fun event! Good looking pizza! Sounds so yummy! Hope you had a great weekend! 🙂 ~Rhonda
The concert looks like a blast Jenna, bet everyone had a great time:@)
Great people and boat watching Jenna! I bet there are lots of sights to be seen and unseen 🙂 It’s borderline too hot to grill already this summer and slow cooker recipes are perfect to keep the heat out of the kitchen. I need to try chicken wings in the slow cooker!
What a fun time on the water, Jenna, and then a BBQ pizza, too! I really must try your Alabama white sauce. Thanks for another tasty recipe!
Jenna, looks like an interesting event and people! The pizza looks fabulous!

That would have been so much fun to attend and coming home to that pizza would be a great way to end the day.
Oh my mercy! My mouth is watering. I have never had white BBQ. This looks like a must try for me. Love all the pictures. Hugs and blessings, Cindy
Thanks Cindy! I hope you try the white BBQ sauce, it’s really good! >
