Recipe Box, Back to the 70s

 

Have you noticed a resurgence of retro recipes lately…you know things that were the rage back in the 70’s like jello salad, crepes, deviled eggs, and tater tots…

I recently read a mystery series called the Country Club Murders, which was set in the 70’s

 

at the Masters

When I started the first book, I didn’t realize it wasn’t set in current time,  so it threw me off a little…

“Why is the author referencing Nixon, I wondered, and why is the phone on the wall with a long coiled cord?

“Wait, there’s not even an answering machine?

Where are the cell phones, computers, and the internet???

Ladies are lunching and playing bridge, not bunco…

People dress up to go shopping, ladies have their hair “done, ” and everyone is drinking scotch neat and has impeccable manners???

It was almost as good as Mad Men!!

My 70’s reminiscing began the other day when I made a Manly version of the classic Quiche Lorraine

And then I made Tater Crabs, homemade tater tots that turned out looking like crabs

Then I remembered the Strawberries & Cream Pretzel Salad I made this spring that was so popular, very 70s!

Cocktail parties during the 70’s often featured Rumaki, chicken livers or water chestnuts wrapped in bacon

This is a modern spin on it,  Deconstructed Hawaiian Pizza, bacon wrapped pineapple served with garlic Parmesan pizza crust

Green Goddess salad dressing was all the rage and salad bars popped up everywhere

Sandwich loaves were served at luncheons, traditionally made with salmon mousse, tuna or egg salad

I made my Mini Smorgastorta with 2 of my favorites, pimento cheese and chicken salad, topped with a bacon rose

Crepes, Manicotti, and Cannelloni were so chic

This  California Cannelloni is a twist on traditional cannelloni,  filled with chicken, mushrooms and bacon in a creamy sauce and  flour tortillas instead of pasta

Lighten up traditional Italian red sauced manicotti with Chicken, Spinach and Apple Manicotti

I bet the restaurant goers of the 70’s would have been surprised to see Butternut Squash and Spinach Cannelloni with Brown Butter & Sage  on the menu!

Fresh lasagna sheets are used like crepes to roll the filling,  so much easier than stuffing pasta tubes

Tuna Casseroles were family favorites for weeknight dinners, traditionally made with canned tuna, cream soup, celery and noodles

Chicken and Mushroom Tetrazzini, is an elegant version, and an easy weeknight dinner

It’s made with a homemade cream sauce of chicken broth and half and half instead of canned cream soup

Bundt cakes were very in, and the bundt pans were a most requested wedding gift

A popular 70’s cocktail inspired a Harvey Wallbanger cake made with vodka, orange juice and galliano

This version,  Baileys Irish Creme Cake, is made with Bailey’s Irish Creme liqueur

Bundt pans are so versatile, you can make all kinds of breads with them too, like Sticky Bun Biscuit Wreath

So take a trip back in time and get your 70’s on!

    Jenna, Did you see Southern Living Magazine’s 50th anniversary issue? They did highlights of recipes from the years, some of the early 60s ones were doozies! I have to say I never saw the appeal of a lot of the congealed salads from the early 70s, especially Tomato Aspic…*shudder*…but I am a fan of the 7 Layered Salad. 🙂

    Yes it’s so true that we associate certain recipes with time periods. I grew up in the 70s. I remember lots of pears with cottage cheese..I thought it was disgusting. We had Patio frozen dinners..remember those? How about layered salad, and nine bean salad, and liver. Ugh!!!

    These are the dishes I grew up on! Cream of Anything soup is a winner anytime, and the book sounds like fun!

    These foods all still sound pretty good to me! Rumaki used to be the “go-to” for all the parties. I still like a good quiche, and James Beard’s Tetrazinni was the “it” dinner party dish. Maybe we should have a Retro Pot-Luck. I’ll make the Harvey Wallbangers!
