Recipe Box, Christmas Coleslaw

This red and green salad goes together in minutes, and is a refreshing change from heavy holiday food

It’s crispy crunchy and full of holiday flavors

Romaine is cut into ribbons and combined with prepared coleslaw mix

Top with dried cranberries, pistachios, sliced almonds and crispy sweet apple pieces

I love to keep an array of salad toppings in the pantry for quick fix salads

and you don’t have to labor over peeling and coring the apple

Cut the apple on 4 sides, leaving the square core intact and discard core

Place the apple pieces cut side down on board and slice thinly and then cut those slices in half

takes only a minute or two

Add nuts and cranberries and toss with your favorite vinaigrette

These ingredients marry well with a champagne vinaigrette or a thin honey mustard like these dressings from Brianna’s

Christmas Coleslaw

Prep Time 5 minutes
Course Salad
Cuisine American

Ingredients
  

  • crisp romaine lettuce
  • prepared coleslaw mix
  • sweet red or green apples like Honeycrisp, Gala, Granny Smith
  • dried cranberries
  • sliced almonds
  • shelled pistachio nuts
  • Champagne vinaigrette or honey mustard dressing

Instructions
 

  • Use any proportion of ingredients you like. I use half romaine and half coleslaw mix for the salad base.
  • Cut romaine into ribbons and combine with equal amount of coleslaw mix. Slice apple into thin bite size slices, peel on. Add apple and other toppings to salad and toss with dressing of choice.
  • Adjust ingredients amounts according to number of servings needed

Mustard Maple Salad Dressing

A wonderful dressing for just about any salad!
Prep Time 5 minutes
Course Salad
Cuisine American

Ingredients
  

  • 1 Tbsp Dijon mustard
  • 1 Tbsp real maple syrup
  • 1 tsp apple cider vinegar
  • 1/4 cup olive oil
  • salt & pepper to taste

Instructions
 

  • Combine ingredients in a small jar
  • Shake well to mix
  • Refrigerate for several hours to blend flavors
  • Store in refrigerator for up to 1 month
  • Double or triple recipe as needed
