Recipe Box, Ranch Roasted Potatoes

I was relaxing with friends at the beach house this past week,

and I wanted dinners to be not only delicious but easy…

These potatoes fit that description to a tee

and go so perfectly with grilled chicken or steak

and grilled vegetables

All you do is cut petite red potatoes into wedges, peel on

Toss with olive oil and sprinkle with dry Ranch seasoning mix

Roast them in a 400 degree oven for 35-45 minutes until golden

They’re crispy on the outside and soft in the middle…😋

Ranch Roasted Potatoes

These potatoes are so easy to make, you can roast them in the oven or cook them on skewers on the grill, for a wonderful side dish for chicken, fish or meat
Prep Time 10 minutes
Cook Time 45 minutes
Course Side Dish
Cuisine American, Grill

Ingredients
  

  • petite red potatoes
  • dry Ranch seasoning mix
  • olive oil

Instructions
 

  • Wash potatoes and cut into wedges, leaving skin on
  • Place wedges into a large bowl and drizzle generously with olive oil. Toss to coat
  • Sprinkle with Ranch dressing mix and toss again to distribute seasoning.
  • Place potatoes on a rimmed baking sheet (you can line it with parchment if desired for easy clean up}
  • Roast in a 400 degree oven until golden and crisp on the outside*

Notes

*to cook potatoes on the grill
Boil them in a pan of water until soft enough to pierce with a fork
Or put them in a glass bowl with just a little water,
cover and cook in the microwave on high for 5 minutes
Now you can proceed with tossing them with oil and Ranch seasoning
and thread them on skewers and grill until golden and crispy

You can also put the potatoes on a skewer and grill them

along with other things you’re grilling

All you have to do is partially cook the potatoes first,

boil them in a pan of water until soft enough to pierce with a fork

    Oh my Jenna, it’s to early for lunch but this post has me hungry! Love all your ideas and recipes. We love grilling and I’m always looking for easy and delicious recipes to try. I roast potatoes like this but never tried the ranch seasoning. I have to try this, yum.

    Your meals are impressive, Jenna! I’ve been doing a lot of take out from the deli section of the grocery store. Nothing seems to taste good to Monnie, so I just buy small amounts of things and test it out. So far, tomato soup was a hit. I have made him scrambled eggs and biscuits and spaghetti that he has liked.

    • Oh Sarah, I’m so sorry Monnie isn’t in the kitchen cooking for you like he used too…I know it’s hard trying to keep his spirits up…you can never go wrong with tomato soup. Have you tried Trader Joe’s tomato soup? It’s really good.
