Recipe Box, Small Bites for Early Spring & St. Patrick’s Day

Spring has arrived in Alabama,
everyday we are seeing new buds, flowers, and blooms
and all I can think about is green and St. Patrick’s Day!

There are a lot of green recipes on my March Bucket List this month
but in the meantime, here are some favorites from the archives
with a nod to the Irish and greens of Spring

One of my favorite things for St. Pat’s are these Garden Tramezzini
They are little tea sandwiches
with a spinach ranch cream cheese filling
and garnished with cucumbers and green onions

Cut them in triangles or little circles
and arrange the sandwich circles to look like a shamrock
and garnish with a sprig of parsley
Perfect for St. Patrick’s Day or a garden party!

Asparagus, Mushroom & Artichoke Flatbread
can be cut into small squares for appetizers
or cut into wedges for a meal

3 Greens Flatbread, asparagus, Brussels sprouts, spinach
is another delicious way to serve greens

Asparagus doesn’t always have to be served as a side dish,
Asparagus Parmesan Fries are a wonderful low carb appetizer

can also be served as an appetizer or a side dish
and has the colors of St. Pat’s Day with green and gold

One of the first foods that come to mind
when I think of the Irish is potatoes
Red Potatoes with Spinach Souffle are quite a tasty bite

You could also fill them with broccoli
and drizzle them with cheddar cheese sauce

The colors of the Irish Flag!

Have you ever had Potato Peel Fries?
They are so good,
and you can serve them with sour cream and chives
for dipping

Cheesy Chive Potato Crowns are bite size potato muffins,
they’re made with thawed frozen hash browns and baked not fried

I love to make seasonal snack mixes,
Lucky Leprechaun Snack Mix will delight any leprechaun!
Corned beef and cabbage is another Irish staple,
but you can make an appetizer version
are made with crescent roll dough
filled with corned beef and sauerkraut,
baked and served with a dipping sauce

I also like to make Mini Reubens on party rye
so good with a bowl of Easy Crockpot Potato Soup

And let’s not forget something sweet~
Baileys Cupcakes will have you dancing an Irish jig!

Jenna, this post is the only click I’ll need to find great ideas for St. Patrick Day dishes. It will be hard to select which I like best, they all sound delicious. The Three Green Flatbread and Asparagus Parmesan Fries will be first to try. A great nod to St. Patrick’s Day…….
