Sunday Supper, ABC Quesadillas and Tortilla Ideas

As I’ve mentioned before,
quesadillas are a favorite around here
We are more likely to have tortillas on hand than bread!

We like flour tortillas, they have a long shelf life
and you can keep them in the refrigerator too
Tortillas aren’t just for Mexican dishes, they are so versatile~
HHjr uses them to make a scrambled egg and cheese
“sandwich” for breakfast
You can fill them with just about anything!
How about a Pulled Pork Wrap with Asian Peach Slaw
Or a Ranch Chicken Wrap
This is really good too,
Pulled Pork Taco with Pineapple Cucumber Salad

Instead of a traditional chicken pot pie,
put chicken and vegetables on tortillas,
roll up and bake to make Chicken Pot Pie Enchiladas

I love BBQ chicken with pineapple,
and it makes a delicious filling for tortillas

Fall is rapidly approaching,
put these yummy Pumpkin Enchiladas on your Fall menu

Today I’m sharing another version of my Summer Quesadilla today,
with asparagus, bacon and corn

I made 2, one with just corn and asparagus
and one with asparagus, corn and bacon
I like to bake them in the oven,
it’s easier than cooking them in a skillet and then having to flip them over
First, spread butter over one side of each tortilla
and spray lightly with olive oil
Place 2 tortillas butter side down on a baking sheet
Now spread these 2 tortillas with mayonnaise
I used my favorite Maple Bacon Aioli
Now add the asparagus, corn and bacon

Top with grated cheese

I like to use Kraft Creamy Melt Three Cheese Blend
or Triple Cheddar Blend for convenience


Place the remaining buttered and sprayed tortillas on top,
butter side up

Bake in a 350 degree oven for 30 minutes

Transfer quesadillas to a cutting board and cut into wedges

Serve and enjoy!


ABC Quesadilla
Equipment
- sheet pan
Ingredients
- 4 6 inch tortillas*
- 1 ear corn
- 8 spears asparagus
- 2 slices cooked bacon, torn into 1 inch pieces, optional
- Maple Bacon Aioli or mayonnaise
- 1 cup grated cheese**
- butter, softened
- olive oil spray
Instructions
- Butter 1 side of tortillas and spray with olive oil
- Place 2 of them butter side down on a baking sheet
- Spread aioli or mayonnaise on these tortillas with the back of a spoon
- Cut corn from cob and sprinkle it over the aioli or mayonnaise
- Break off tough ends of asparagus and cut into one inch pieces and put on top of corn
- Add bacon pieces if desired
- Sprinkle grated cheese over all
- Place remaining buttered and sprayed tortillas on top of cheese, butter side up
- Bake at 350 degrees for 30 minutes or until golden
- Transfer quesadillas to a cutting board and cut into wedges to serve

A few years ago I got on a kick of making my own tortillias from scratch. Why? I have no idea. They were pretty good, but really now, what was I thinking?
I have made them too, but it’s awfully easy just to buy them!
