Holidays, Easter Recipe Round-up

I am relaxing at the beach this week,

enjoying Spring Break with part of my family

I’m thinking about Easter

which will arrive only a few days after I get back

I’m going through my recipe archives and ideas for inspiration

for our family celebration

Let’s start with Appetizers and Brunch

Carrot Dip Garden is one of my all time favorite appetizers,

it takes less than 5 minutes to make,

and makes a pretty presentation on your table or buffet

Puff Pastry “Cigars” are filled with ham and 2 kinds of flavorful cheeses

baked to golden perfection

Sassy Sausage Squares are a wonderful appetizer or brunch dish

so easy to make with only a few ingredients

and they are dangerously good

Or you can make a Sassy Sausage Southern Quiche

How about some Coconut Pancakes

Fluffy buttermilk pancakes topped with sweet coconut and

drizzled with coconut cream

Lemon Filled Golden Eggs have a lemon curd filling

and a sweet sugar glaze

Pimiento Cheese & Bacon Puff Pastry Eggs

dough spirals filled with Smoked Gouda Pimiento Cheese,

crispy bacon and raspberry jam

Croissant Brunch Casserole can be made ahead,

refrigerated overnight,

then baked in the morning for a special breakfast or brunch

Blueberry Shortcake Bread Pudding is another make ahead dish

that both children and adults will love

Asparagus in a Cloud is one of my long time favorites,

it’s very easy to make,

asparagus spears are laid on top of puff pastry

covered with a blanket of Alfredo sauce,

and topped with Parmesan and baked

Asparagus in a Cloud can be served as a side dish

with your Easter Ham or Lamb

Here are some side dishes that pair nicely with any meat or poultry entree

Lemon Ricotta Lasagna Rolls are so pretty,

garnished with basil chiffonade,

they look like Easter eggs and grass

Asparagus, Leek & Mushroom Risotto

can be made with either chicken, vegetable or beef stock

to pair with your main course

Southern Scalloped Pineapple with Pecans is a Southern classic

Green Bean Bundles are another Southern recipe classic

I gave it an update by serving the warm bean bundles

atop of salad greens drizzled with a warm vinaigrette

for Green Bean Bundle Salad

Lemon Parmesan Broccolini and Roasted Radishes

will add a bright pop of color to your Easter plates

And now for dessert!

It’s all about the bunnies, eggs and cake!

    Vacationing! You lucky girl. Thanks for assembling this wonderful Easter round up. I finished up with St. Patrick’s Day yesterday, so I’m already starting to decorate for Easter. There are so many wonderful ideas here that I’m going to need to take notes. Those puff pastry cigars are going to be the first things that I try. Have fun!

    Oh Jenna, this post is chocked full of wonderful recipes. I could plan my Easter weekend menu with all of these. The carrot dip garden is irresistible and what a great start. Next I would serve a big platter of the sausage squares while preparing the Croissant Brunch Casserole.to serve along side a baked ham. I would also serve the Southern Scalloped Pineapple with Pecans and anyone of your beautiful cakes for dessert! Not sure what our plans will be for Easter but my table is sure to have some of these special dishes. Have a wonderful and relaxing time at the beach.

    Lovely dishes and decorations! Your inclusion of the Southern Scalloped Pineapple proves you know what people like. I first had this dish at a cookout at the home of a boss at the time. When I replicated it–I was stuck with it for life, but that’s a good thing. The men in my family refuse to have any gathering without what we call Pineapple Casserole. I use pineapple chunks, but the result is the same–delicious and easy. Have a great time at the beach! Georgia Gal
